APOS Ultra Premium Extra Virgin Olive Oil

A boutique EVOO made exclusively from the Maronia olive — an authentic variety native to Ancient Maronia in northeastern Greece. The groves are located within a protected archaeological reserve, an ecologically clean environment with a distinct terroir identity.

Harvest begins in early October. Each olive is picked by hand at a ratio of approximately 90% green to 10% ripe, ensuring a concentrated expression of the fruit. Extraction takes place in our mill within hours of harvest, at controlled temperatures up to 25°C.

The result is a limited production EVOO with acidity below 0.3%, high phenolic content, and a refined sensory balance of bitterness, spiciness, and measured fruitiness.
